{recipe} Chilled Mango Salsa

Summer days ahead call for refreshing food with no heat necessary to prepare them. I picked up 3 perfectly ripe mangos this weekend. 1 mango for snacking and two to use in whipping up this delicious recipe.

2 large mangos, diced
½ cup blueberries
1 cucumber, diced
¼ cup onion, diced
¼ medium sized lemon, freshly squeezed
cilantro leaves, chopped
1/8 teaspoon dried jalapeno flakes (note: you can add more to your liking)
1/4 teaspoon dried mint flakes
kosher salt, dash
fresh mint leaves, garnish

  • Combine mango, blueberries, cucumber, onion, lemon, and cilantro. Season mixture with mint, kosher salt, and jalapeno to taste. Garnish with a mint sprig.
  • Cover and refrigerate for at least 1 hr but preferably overnight.
  • Serve with rice, fish, or cinnamon pita chips for a refreshing summer treat

  1. I love chilled fruit, especially on a hot day. My favs are frozen grapes and a dark chocolate frozen banana – YUM! Have a Great Day!

I love frozen grapes too! What is it about cold grapes that make them better? Hmm.
