{gluten & dairy free} Soft Double Chocolate Cookies

Warmer days have started to descend on us, here in the Capital Region of NY, and everyone is cheering, hoping Spring is here to stay. The happiest of those in my house are my children.  They have been playing outside constantly, soaking up the fresh air and the sunny skies.  I wanted an easy, delicious treat to make for them while they played outside, and this is what I came up with one afternoon.

Soft Double Chocolate Cookies

Who wouldn’t love warm cookies delivered to them while they swing?  My kids cheered, and so did I, because they cookies are amazing and easy.  Soft on the inside, with a slightly crisp outside, these cookies are sure to be a snack-time hit at your house as well.

Recipe: Soft Double Chocolate Cookies {Gluten Free, Dairy Free}


  • 3/4 cup Spectrum Shortening
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 1 3/4 cup Brown Rice Flour Mix *{see note}
  • 1/4 cup Sweet Rice Flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon baking soda
  • 4 tablespoon cocoa powder
  • 1 cup dairy free chocolate chips {I use Ghirardelli Semi Sweet chips}

*Note: To make a Brown Rice Flour Mix: combine 2 parts Brown rice flour (super fine ground), 2/3 parts Potato starch and 1/3 part Tapioca flour.


  1. Preheat oven to 375°. Lightly grease cookie sheets with cookie spray, or line with parchment paper
  2. Beat the shortening and both sugars in the bowl of a mixer.
  3. Add the eggs and vanilla and mix until well combined.
  4. Add the Brown Rice Flour Mix, Sweet Rice Flour, xanthan gum, salt, baking soda and cocoa powder to the bowl of the mixer. Mix well.
  5. Add in the chocolate chips, stirring to combine.
  6. Scoop cookie dough by rounded spoonfuls onto the prepared cookie sheets. Bake for 8mins.
  7. Remove and let cool {if you can wait!}
