{Welcome Spring} A Run & Burritos

Sunday was a beautiful day.  I decided to make the most of it and headed outside with C-man and our trusty dog, Georgia.  I was due for a training run, as I’m running the Suntrust National Half Marathon on March 26th, so what better day to try out the jogging stroller along with the dog.  I’ve run with both seperately, but all together ….. this was a new adventure.  After few minor fumbles, we had a great 4 miles.

Because we went out for a late afternoon run, I needed something to put together for dinner that would be quick and easy.  My take on easy Mexican dishes is always my go-to when I need something quick and delicious.  I’m not even going to post a recipe because there is really no recipe involved. I cooked up a pound of ground turkey with various spices.  I used cumin, garlic powder, salt & pepper. Season to your tastes. I’ve used all different things here. I also chopped a red pepper and an onion and sauteed them with the meat.

Once the meat “mixture” is done,  I spooned a heap of refried beans into a tortilla shell, topped it with the ground turkey and a sprinkle of shredded cheddar cheese.  After all of the burritos were prepared I put them in the oven at 375 for about 20 minutes.  Long enough to heat them all the way through and make the shells a little crunchy.  I served the burritos with black beans and rice.  These were perfect and at the table in about 45 minutes start to finish.  C-man cleaned his plate!  Experiment, put in whatever you have and enjoy!!
