{Kid Tested & Approved} Cowboy Chili

You have heard about our successful Soup Swap event held at my house a couple of weeks ago.  It was so fun to get together with the kids.  Seeing that the adults were partaking in a “soup tasting” I felt that we needed a hearty dinner for the kids… and for us after the tasting.

I asked to borrow the copy of Meal Makeover Moms’ No Whine With Dinner a few weeks before the event.  It had been sitting on my counter unopened until it dawned on me that this event would be the PERFECT situation for a taste test and review of a recipe from the book. There would be six kiddos in attendance ranging from eight to two years old- perfecto!

Now there was ONE big challenge.  Our founder and dear friend Chris has a two-year old son with severe life-threatening food allergies and we had a goal to make this party allergen free! So that meant no dairy, gluten, nuts, or soy.

This seemed like a daunting task at first.

Our menu:

*Huge platter of veggies with Sarah’s awesome beat hummus

*Huge platter of fruit

*Popcorn with Nutritional Yeast from Alexis

* Faux Nuts Chris’ way

AND for the main course:  Cowboy Chili with Sweet Potatoes and Corn from No Whine with Dinner. (Enter the giveaway for a chance to win a copy of the book with the Cowboy Chili Recipe*) and allergy-free corn bread by Chris.

Now this was great chili but not how I have made it in the past. The main difference with this chili is that you add sweet potatoes and a blend of spices, brown sugar, chili powder, cumin and cinnamon, which makes it a little sweet instead of smokey and spicy. We make A LOT of chili around our house, so I was pretty skeptical before everyone arrived that it would be a hit.

Still a little skeptical as I served up six big bowls of chili for the little people.  They sat down at their table and what do you know they were gobbling it up!  Wow!  Alexis’ daughter loved it so much that she stayed at the table long after the other kids had left and kept eating. I was amazed and certainly pleased.

The Cowboy Chili is kid and mom tested and APPROVED! Enter the giveaway now- ends tomorrow night at midnight.
