As stated in the title I LOVE me some PASTA, I don’t care the topping- I’ll pretty much eat anything.
I started to get sick of grilled Zucchini after about the tenth or so bag of zucchini brought to us by my WONDERFUL in-laws. I couldn’t stand to see any go to waste, so night after night, on the grill it went. With Zucchini, and pasta being about the only 2 things we had left in our house- I quickly googled zucchini pasta, and found a bunch of things that looked good- so I just started cooking (Not following any specific recipe).
Here’s what I did- EASY, FAST, DELICIOUS
Zucchini Pasta topped w/ Ricotta Cheese and Parsley
2 Medium Zucchini ( Chopped into round disks)
1 Clove Garlic
2 TBS Olive Oil
1/4 C Ricotta Cheese Per serving
Hand Full Parsley chopped
1 PKG Pasta- My personal favorite is linguine
Chop Zucchini into disks, chop onion and garlic. Preheat pan add Olive oil, and saute veggies about 10 minutes. Mean while get pasta cooking according to package directions. After you drain pasta, you are ready to plate it up, Pasta-Zucchini mixture-Ricotta Cheese, topped with chopped Parsley.
