{recipe} Black Bean Mushroom Burger

We are very thankful for the rain and the first fruits from our garden: mushrooms and chard. With a pot of freshly cooked black beans, I am ready to make some burgers. You could use other kinds of beans or replace oats with breadcrumbs, but this held together and will be great for the grill.

RECIPE: Black Bean Mushroom Burger

INGREDIENTS

  • 2 cups cooked black beans
  • 1 cup of onions, chopped
  • 1 cup of Shitaki Mushrooms, chopped
  • 2 cups chard, chiffonade
  • 1 cup of old fashioned rolled oats
  • 2 Tablespoons flax seeds mixed with 4 Tablespoons of water
  • 2 cloves of garlic, mashed with salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • salt and pepper to taste

METHODS

  • Shitaki Mushrooms:

  • top row: Shitaki Mushrooms, chard, cooked black beans
  • bottom row: onions, ground flax seeds, oats, garlic, cumin and smoked paprika

  • sweat onions and chard on medium heat 3-4 minutes:

  • chop mushrooms:

  • add chopped mushrooms, garlic and spices to onion and chard mixture:

  • mash beans with olive oil:

  • mix oats, flax seeds, 4 tablespoons of bean liquid if freshly cooked or water to the vegetable mix:

  • use ice-cream scoop to measure press the burgers:

  • pan fry the burgers on medium heat 2-3 minutes on each side:

  2. Happy to hear Jon. I hope you will enjoy. Growing up in Brazil, we pair black bean and collard green often, so I added the green we have, since we are growing chard. It did give a nice layer of texture for sure.
