{It’s strawberry picking season and I couldn’t be happier}
My favorite thing about the summer months is picking fruit: strawberries, blueberries, raspberries and blackberries, peaches…
It is the thought of summer days, picking fruit, that gets me through the winter months.
Each dreary winter day is one step closer to having a fresh, ripe berry in my hands.

With all these strawberries currently at our fingertips, I thought I would share a strawberry recipe.
How about two summer favorites combined into one muffin? It is sure to be a crowd pleaser.
Strawberry Lemonade Muffins

RECIPE: Strawberry Lemonade Muffins {Gluten & Dairy Free}
Ingredients
- 2 eggs
- 3/4 cup white sugar
- 1/4 cup oil
- 1 cup of lemonade
- 2 1/2 cup Brown Rice Flour Mix *(see note)
- 3/4 teaspoon xanthan gum
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- dash salt
- 1 1/2 – 2 cups chopped strawberry
- optional: granulated sugar to sprinkle on top
*Note: To make a Brown Rice Flour Mix: combine 2 parts Brown rice flour (super fine ground), 2/3 parts Potato starch and 1/3 part Tapioca flour.
Instructions
- Preheat oven to 350°. Lightly grease muffin pan with cookie spray.
- Beat the eggs in the bowl of a mixer. Add the sugar and combine.
- Then add in the oil and lemonade. Mix well.
- Add the Brown Rice Flour Mix, xanthan gum, baking powder, baking soda and salt to the mixer bowl. Mix until just combined.
- Add in the chopped strawberries once the batter is almost entirely combined. Stir in gently.
- Scoop the dough into the prepared muffin pan.
- If desired, sprinkle granulated sugar over the tops of each muffin before baking.
- Bake for 15-18 mins for regular sized muffins. {For mini muffins, bake 8-10 mins.}
- Remove and let cool.
