Snacks…it seems on the weekends that my kids constantly want to eat. I feel like the kitchen is a revolving door and most times they just want to snack out of boredom. In the book I found it very interesting to read this factoid: “kids eat an average of 850 nibbles between meals every year.” Wow.
Parents, it is our job to make those 850 nibbles as good as we can with snacks made from good quality ingredients that will boost their nutrition. So The Meal Makeover Moms’ chapter entitled, “Snack Attack” really hit home.
I love to bake and the “No Nut Pumpkin Chocolate Chip Muffins” (in said chapter) was a huge hit and it made a ton of muffins. I had used up all my mini muffin pans and ended up still having enough batter for 6 large muffins. The other wonderful thing…no paper liners needed and they came out of the pan perfectly.

Again, they were a huge hit. Stored them in a ziploc bag and snacked on them for a few days and even enjoyed them for breakfast- make them this weekend!






















Just visited their website – i LOVE it! I think my son only snacks, he doesn’t really eat whole meals…sometimes (most of the time) its very easy to forget to make those snacks as healthy as the meals! I’m going to try to plan my weeks meals/snacks from their site to see how he likes them, then get their books! Great post

My kids love pumpkin muffins. This recipe is one i will try as well. I usually make a huge batch of mini muffins, and then freeze some. Then I just pull one out and pack it in my son’s lunch box. It’s a great healthy morning snack for him at school.
